Murasaki Sushi

Wine served by the glass without uncorking the bottle.

This is only possible thanks to the Coravin extractor, which removes the wine through a needle while injecting argon gas into the bottle. Since cork stoppers are very pliable, they reseal immediately after the needle is withdrawn. Being inert, argon allows the remaining wine in the bottle to continue evolving without oxidizing.
